Every cup is siphoned to order, roughly five minutes from flame to cup. We keep the list short so nothing on it is routine.

Each pot serves one. We ask that laptops stay closed at the six-seat counter — it's built for watching the brew, not for working through it.

Brewing you can watch happen

熱 - Heat rises

Water in the lower flask is warmed over a low flame until vapor pressure pushes it up through the neck into the chamber above.

浸 - Grounds steep in vacuum

Coffee meets water in the upper globe, stirred once, and steeps fully immersed for about ninety seconds.

降 - The flame is removed

As the lower flask cools, vacuum draws the brewed coffee back down through its own filter — clean, bright, and fully clear.
